Massaman curry fried chicken

  • whole chicken, approx. 1.8 kg
  • two thumb-sized pieces of ginger root
  • 1 stick of lemongrass, crushed with a rolling pin
  • 1 lime, cut into quarters
  • 70 g/2½ oz package massaman curry paste (I used Blue Elephant)
  • 1 tsp olive oil
  • 450 g young new potatoes, all larger ones cut in half
  • 400 ml can of coconut milk
  • 1 teaspoon brown sugar, any type
  • 200 g green beans, cleaned
  • 1 tsp fish sauce
  • 2 tablespoons unsalted peanuts, crushed (optional)
  • Basmati rice for serving

Heat 5 tablespoons of white wine in a medium-sized pan.

Preparation steps

  1. Place the chicken in a roasting pan or large casserole dish.
  2. Roughly chop half of the ginger and add to the chicken cavity with the lemongrass and half of the lime, then tie the legs together with a string.
  3. Mix 1 teaspoon of curry paste with the oil, rub the chicken with it and then season with salt and pepper.
  4. Preheat the oven to 200°C/fan 180°C/gas mark 6, cover the chicken loosely with foil and place it in to roast.
  5. After 35 minutes, remove the foil from the bird.
  6. Place the potatoes in the mold and then stir them in any juice.
  7. Roast for another 40 minutes, until the chicken is cooked through and golden brown and the potatoes are tender.
  8. Remove the chicken from the tin and let it rest, loosely covered.
  9. Place the tin on the stove, add the remaining curry paste, grate in the remaining ginger, then fry for 2 minutes until fragrant.
  10. Stir in coconut milk and sugar and cook until sauce has thickened slightly, about 5 minutes.
  11. Add the beans, simmer for another 4 minutes (or until tender), then splash in the fish sauce and remaining juice and squeeze over the remaining lime.
  12. Sprinkle with the peanuts for the authentic Massaman taste.
  13. Carve the chicken and serve with the fried potatoes and basmati rice.
