  • 50g mayonnaise
  • 1 egg
  • ½ tbsp Old Bay seasoning (optional)
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Squeeze 1½ lemons
  • a handful of chopped parsley
  • 500g white crab meat
  • 50g breadcrumbs (look for crispy Japanese-style panko breadcrumbs)
  • 5 tbsp olive oil
  • 350 ml white wine
  • 3 shallots, diced
  • 1 sprig of thyme
  • 1 bay leaf
  • 3 tbsp extra thick cream
  • 300g butter, cut into small cubes
  • Juice 1 lemon

Preparation steps

  1. Mix together mayonnaise, egg, Old Bay seasoning, Dijon mustard, Worcestershire sauce, lemon juice and parsley.
  2. Fold crab meat into mixture.
  3. Add breadcrumbs to the mixture.
  4. Chill the mixture for 20 minutes.
  5. Form the mixture into 6 equally sized cakes.
  6. Preheat the oven to 190°C/fan 170°C/gas 5.
  7. Heat a large ovenproof skillet.
  8. Add olive oil to the frying pan.
  9. Fry the crab cakes on each side in the frying pan.
  10. Transfer the crab cakes to the oven and bake for 10 minutes or until cooked through.
  11. Bring the white wine, shallots, thyme and bay leaf to the boil until reduced to about 3 tablespoons.
  12. Add cream to the mixture and bring to a boil again.
  13. Remove the mixture from the heat and slowly add butter, stirring constantly.
  14. Round off the sauce with fresh lemon juice and season to taste.
  15. Place the crab cakes on plates.
  16. Place a small pot of sauce on each plate.
  17. Serve with dressed green salad leaves.
