- 900g tomatoes
- 3 red peppers, 1 large eggplant and 1 green pepper (total weight approx. 900 g)
- 700g onions, peeled and chopped fairly finely, by hand or in a food processor
- 4 thick cloves of garlic, crushed
- 350g granulated sugar
- 300ml/½ pint white wine vinegar or distilled malt vinegar
- 1 tbsp salt
- 1 tbsp coriander seeds, crushed
- 1 tbsp paprika
- 2 teaspoons cayenne pepper

Preparation steps

- Peel the tomatoes – pierce with a sharp knife, place in a bowl and cover with boiling water. Let sit for a few seconds, then drain and cover with cold water. The skins can now be easily removed.
- Chop tomatoes and aubergines, remove seeds and chop peppers. Place the onions and garlic in a large, heavy-based pot and bring to the boil. Cover with a lid, reduce heat and simmer gently, stirring occasionally, until tender, about an hour.
- Add the sugar, vinegar, salt, coriander, paprika and cayenne pepper to the pan and cook over medium heat, stirring, until the sugar has dissolved. Continue cooking until the mixture reaches a lumpy chutney consistency and the excess watery liquid has evaporated, about 30 minutes. Towards the end of the cooking time, be sure to continue stirring so that the chutney doesn’t stick to the bottom of the pan.
- Pour the chutney into sterilized or dishwasher-safe jars (Kilner jars are ideal) and cover with paper jam lids. Close the jars while they are still hot. Leave to ripen in a cool, dark place for at least a month.
