- 3 passion fruits
- 500 ml bottle of freshly squeezed orange juice
- soft butter for greasing
- 85g powdered sugar, plus 1 teaspoon for coating
- Zest of 1 orange
- 250g can of ricotta
- 100g cream cheese
- 1 tbsp cornstarch, plus 1 tsp for the sauce
- 2 free range egg yolks
- 1 large, ripe mango, pulp cut into 1cm pieces
- 3 egg whites
- 1 tbsp Orange Curaçao or Cointreau
- Powdered sugar, for dusting
- Halve the passion fruit and put the pulp in a pot. Add the orange juice and bring to the boil until reduced by half. Strain into a jug to make about 250ml and rub with a spoon. Discard the cores. Cool.
- Preheat the oven to 180°C/fan 160°C/gas 6. Grease the sides and bottom of 8 x 150ml ramekins evenly and then brush with 1 tbsp sugar.
- In a large bowl, stir together half the powdered sugar, the orange peel, ricotta, cream cheese, 1 tablespoon of cornstarch and the egg yolk. Fold in the mango pulp and 6 tablespoons of the reduced juice.
- Whisk the egg whites until soft peaks form, then stir in the remaining sugar. Fold this into the ricotta mixture and spoon into the prepared bowls so that the surface is smooth. Place the dishes in a large, deep roasting pan and cover them halfway with boiling water. Cover the entire roasting pan with foil and loosely seal the edges. Bake for 50 minutes until the soufflés have risen and set.
- In the meantime prepare the sauce. Mix 1 teaspoon of cornstarch with a little cold water. Bring the remaining juice to the boil in a small saucepan, mix a little with the cornstarch and then pour back into the pan with the Curaçao or Cointreau. Cook, stirring, until thickened. Set aside to cool. Lightly dust each dessert with powdered sugar and drizzle with a little sauce. Serve remaining sauce separately.
