Ingredients

  • 300g mango pieces
  • 100g granulated sugar
  • a thin slice of ginger root
  • Juice 3 limes
  • 200 ml Pisco
  • 1 egg white
  • Angostura bitters to finish

  1. Place mango pieces, granulated sugar and ginger root in a medium saucepan and add 100 ml water.
  2. Stir and simmer for 7-8 minutes until the mango softens.
  3. Remove from heat and allow to cool for 10-15 minutes.
  4. Pour the cooled mango syrup through a sieve into a cocktail shaker.
  5. Add lime juice, pisco and egg white.
  6. Fill to the brim with ice.
  7. Shake well.
  8. Strain into 4 cups.
  9. Add a few shakes of Angostura bitters at a time.
  10. Surcharge.
