For a quick and delicious raspberry sauce, puree 225g of thawed frozen raspberries with 2 tablespoons of powdered sugar in a blender and then press through a sieve.

Preparation steps

  1. Preheat the oven to 150°C/gas 2/fan 130°C.
  2. Line a 33 x 23 cm jelly roll tin with non-stick baking paper.
  3. Beat the egg whites with an electric whisk until foamy and double in volume.
  4. Slowly beat in the powdered sugar until thick and glossy.
  5. Mix the cornstarch, vinegar and vanilla extract together and then stir into the egg whites.
  6. Pour the mixture into the mold and level the surface carefully so that the air is not squeezed out.
  7. Bake for 30 minutes until the top of the meringue is just set.
  8. Remove from the oven and cover with damp baking paper for 10 minutes.
  9. Dust another sheet of baking paper with powdered sugar.
  10. Discard the damp paper and turn the meringue out onto the sugar-coated paper.
  11. Peel off the lining paper.
  12. Spread the yoghurt on the meringue and sprinkle with mango and passion fruit.
  13. Use the paper to roll up the roulade from one short end, leaving the connection downwards.
  14. If desired, sift a little more powdered sugar over the top.
  15. Decorate with physalis and serve with raspberry sauce.
