Ingredients
- 100g unsalted butter, plus a little more for the tin
- 300g pink and white marshmallows
- 200g rice cereal (try Rice Krispies)
- 300g white chocolate, melted, for coating
- some melted dark chocolate or black icing to decorate
- Wooden lollipop or coffee stirrer (stirrers are a little more flexible)
Preparation steps
- Grease with butter and then line a 30 x 20 cm jelly roll tin with baking paper.
- Melt the butter in a large non-stick pot.
- Add the marshmallows, then melt them very gently for about 10 minutes, stirring regularly to make sure they don’t stick.
- Once everything is smooth, stir in the muesli until all the grains are covered.
- Pour the mixture into the mold and press down to make it flat and smooth.
- Refrigerate until cool and firm. Can be made up to 2 days in advance.
- Make the ghost shapes in two ways.
- Cut the cake into rectangles, then use a sharp knife to round the top and zigzag the bottom.
- Or to make flying ghosts, punch out circles with a diameter of approx. 9 cm and divide them into teardrop-shaped ghosts with a sharp knife.
- If you wish, cut pieces from the leftover cake to make arms.
- Carefully insert a lollipop into the bottom of each ghost.
- Place on a cooling rack.
- Once you’ve made arms, stick them on with some white chocolate, then top with more chocolate and brush it over the sides of the ghosts with a pastry brush.
- Allow to harden.
- Pipe the dark chocolate or icing onto the eyes.
