Ingredients

  • 6 medium sized mackerel, weighing about 350g/12oz each, cleaned, rinsed and dried
  • 4 tbsp Thai red curry paste
  • 3 tbsp olive oil
  • Juice of 3 lemons
  • a small handful of fresh coriander, roughly chopped

Preparation steps

  1. Preheat the oven to 180°C fan/200°C top/bottom heat/Gas 6.
  2. Make 4-5 deep diagonal cuts on both sides of each fish.
  3. Mix the curry paste with the olive oil and the juice of a lemon.
  4. Rub the curry paste mixture all over the fish and into the pieces.
  5. Cut out six 65cm x 30cm sheets of foil and fold each in half to form a rough square.
  6. Place a fish on each square.
  7. Squeeze the remaining lemon juice over it.
  8. Sprinkle with coriander.
  9. Wrap the foil loosely around the fish.
  10. Seal the edges well.
  11. Place the packages on a baking sheet.
  12. Bake in the oven for about 20 minutes.
  13. Transfer the fish to plates and drizzle with the juice, or give a packet to each person.
