- 6 medium sized mackerel, weighing about 350g/12oz each, cleaned, rinsed and dried
- 4 tbsp Thai red curry paste
- 3 tbsp olive oil
- Juice of 3 lemons
- a small handful of fresh coriander, roughly chopped
- Preheat the oven to 180°C fan/200°C top/bottom heat/Gas 6.
- Make 4-5 deep diagonal cuts on both sides of each fish.
- Mix the curry paste with the olive oil and the juice of a lemon.
- Rub the curry paste mixture all over the fish and into the pieces.
- Cut out six 65cm x 30cm sheets of foil and fold each in half to form a rough square.
- Place a fish on each square.
- Squeeze the remaining lemon juice over it.
- Sprinkle with coriander.
- Wrap the foil loosely around the fish.
- Seal the edges well.
- Place the packages on a baking sheet.
- Bake in the oven for about 20 minutes.
- Transfer the fish to plates and drizzle with the juice, or give a packet to each person.
