  • about 6 tablespoons thick lemon curd, plus some for topping
  • ½ x 450g pack of ready-to-use icing
  • lollipop

  1. Preheat the oven to 160°C/fan 140°C/gas 3.
  2. Grease and line the bottom of a 20 cm diameter round cake tin.
  3. Place all cake ingredients in a large bowl and beat until smooth, about 2 minutes.
