Ingredients

  • 1 small, whole cooked lobster (about 400g, thawed if frozen)
  • ½ small celery
  • ½ lemon, juiced
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • Splash of Tabasco
  • ½ small packet of dill, chopped, saving a few fronds for last
  • toasted sourdough or your favorite bread for serving (optional)

Preparation steps

  1. Remove the roe from the lobster, if any, and set aside.
  2. Twist off the lobster’s tail and peel it. Halve the tail lengthwise and cut into thick slices. Put aside.
  3. Break open the lobster’s claws and try to remove the meat whole. Set it aside with the tail.
  4. Remove the rest of the meat from the lobster legs and legs. Keep it separate.
  5. Pour lemon juice into a bowl.
  6. Finely cut the celeriac into strips or grate it roughly or spiralize it.
  7. Add the celery to the lemon juice and stir to prevent it from browning.
  8. Add mayonnaise, mustard, Tabasco and spices to the celery. Mix well.
  9. Stir in the shredded lobster meat, most of the roe (if using), and the chopped dill.
  10. If you prepare in advance, you can do this up to this point and store it in the refrigerator. Remove from the refrigerator 1 hour before serving.
  11. Carefully place the celery in the middle of two small plates.
  12. Arrange the lobster claw on one side and the tail meat on top of the celeriac.
  13. Scatter the dill fronds and remaining roe over the lobster.
  14. Serve with toast if desired.
