Ingredients

  • 1 red onion, halved and finely chopped
  • ½ lime, juiced
  • 450g frozen oven fries
  • 2 teaspoons Cajun seasoning, plus a pinch
  • 6 pork or chorizo ​​sausages
  • 150g mixed grated cheddar and mozzarella cheese
  • 2 tomatoes, finely chopped
  • 150g sour cream
  • 50g pickled jalapeños
  • small bunch of coriander, leaves picked

Preparation steps

  1. Mix the sliced ​​onion, lime juice and a pinch of salt in a non-metal bowl and marinate lightly for 20 minutes.
  2. Preheat the oven to 200°C/180°C fan/gas 6.
  3. Arrange the fries in a single layer on a large baking sheet.
  4. Sprinkle the fries with a generous pinch of Cajun seasoning.
  5. Bake the fries for 10 minutes, shaking the tray after 5 minutes.
  6. The fries should be cooked but not have much color.
  7. Squeeze the sausage meat out of the shell and place it in a roasting pan.
