  • 100g couscous
  • 2 carrots, finely grated
  • 250g pack of extra lean minced lamb
  • Bunch of spring onions, finely chopped
  • 1 bunch fresh mint, finely chopped
  • 1 egg, beaten
  • Rocket leaves and raita or natural yogurt for serving
  • 1 tbsp olive oil
  • 750g sweet potatoes, peeled and cut into chips
  • 1-2 tsp smoked paprika powder

  14. Bake the burgers in the oven for 20 minutes until browned and cooked through.
  15. Alternatively, you can grill the burgers over high heat or on the grill for 6-8 minutes on each side.
  16. Divide the chips between 4 plates.
  17. Place a burger on each plate.
  18. Serve with a simple leaf salad, such as rocket.
  19. If desired, spoon some raita or yogurt over the burgers.
