- 1 tbsp ginger, chopped
- 2 cloves of garlic, minced
- 3 stalks of lemongrass, outer leaves removed, finely chopped
- 2 tbsp coriander leaves and a little more for serving
- 2 red chili peppers, thinly sliced (if you like it spicy, leave the seeds in)
- 2 tbsp vegetable oil
- 250g braised beef, cut into 2½cm cubes
- 2 tbsp dark soy sauce
- 1 tsp five spice powder
- 1 tsp brown sugar
- 400 ml beef broth
- 100g wide rice noodles
- Lime wedges for serving
Do it quickly
To make lemongrass beef with pasta, quickly brown 250g lean sirloin steaks, cut into strips, in 1 tbsp oil over high heat, then remove from the pan. Make the ginger paste and fry it in another tablespoon of oil as above. Then add soy, five spice, sugar and broth. Simmer for 15 minutes, then add the beef back in and cook until done to your liking. Serve with pasta as above.
- Place ginger, garlic, lemongrass, coriander and 1 chili in a food processor and puree.
- Heat the oil in a pan over low heat.
- Add the puree and cook for 5 minutes.
- Stir in beef, soy, five-spice seasoning, sugar and broth.
- Put a lid on and bring to the boil, then reduce the heat and simmer for 1 hour and 15 minutes.
- Remove the lid and cook for another 15 minutes until the beef is tender.
- Shortly before serving, prepare the pasta according to the package instructions.
- Drain well, then divide between two bowls and spoon over the beef stew.
- Serve sprinkled with the remaining chili and coriander leaves.
- Add lime wedges for squeezing.
