  • 1 tbsp ginger, chopped
  • 2 cloves of garlic, minced
  • 3 stalks of lemongrass, outer leaves removed, finely chopped
  • 2 tbsp coriander leaves and a little more for serving
  • 2 red chili peppers, thinly sliced ​​(if you like it spicy, leave the seeds in)

  • 250g braised beef, cut into 2½cm cubes
  • 2 tbsp dark soy sauce
  • 1 tsp five spice powder
  • 1 tsp brown sugar
  • 400 ml beef broth
  • 100g wide rice noodles
  • Lime wedges for serving

  8. Drain well, then divide between two bowls and spoon over the beef stew.
  9. Serve sprinkled with the remaining chili and coriander leaves.
  10. Add lime wedges for squeezing.
