  • 250g self-raising flour, plus a little more for dusting
  • 50g butter, chilled and cut into small pieces, plus a little butter for greasing
  • 25g golden powdered sugar
  • Zest 2 lemons
  • 125 ml buttermilk
  • 4 tbsp whole milk
  • 3 tbsp powdered sugar
  • Zest 1 lemon and add some lemon juice
  • 4 white sugar cubes, crushed, or 1 tbsp preserving sugar
  • Clotted cream and jam to serve

Preparation steps

  1. Preheat the oven to 220°C/200°C fan/gas 6 and grease a large baking tray.
  2. In a large bowl, rub together the flour, 1-4 teaspoons salt, and butter with your fingertips until the mixture resembles fine breadcrumbs.
  3. Add the powdered sugar and lemon zest and mix with a cutlery knife.
  4. Mix buttermilk and milk.
  5. Make a well in the center of the flour mixture and add the liquid.
  6. Use your cutlery knife to work the mixture into a soft dough, but don’t over mix or the scones will be heavy.
  7. Place on the work surface and roll out the dough to a thickness of 2.5 cm.
  8. Use a 7cm cookie cutter to cut out the scones.
  9. Do not twist when cutting, otherwise the scones will reach their full potential.
  10. Any leftover dough can be gently squeezed back together to make more scones.
  11. Place the scones on the baking sheet and bake for 10-12 minutes until golden brown.
  12. Place on a wire rack and let cool.
  13. Mix the powdered sugar with enough lemon juice to create a thick but runny glaze.
  14. Drizzle the icing over the scones.
  15. Sprinkle with crushed sugar cubes and lemon zest.
  16. Let it set for 10 minutes.
  17. Enjoy the scones with clotted cream and jam.
