Lemon Mushroom Herb Rice

  • a cup of American long grain rice
  • 250g pack of chestnut mushrooms
  • 2 tbsp olive oil
  • 2 large garlic cloves, finely chopped
  • 5 tbsp chopped parsley
  • 3 tbsp chopped chives
  • finely grated zest of 1 lemon

Preparation steps

  1. Fill a spacious pot with water and bring it to a boil.
  2. Add a heaped teaspoon of salt to the boiling water.
  3. Add the rice and stir once, then bring the pot back to the boil.
  4. Reduce the heat slightly so that the water boils evenly but not too much.
  5. Let the rice cook uncovered and without stirring for 10 minutes.
  6. Take out some of the rice with a slotted spoon and taste a grain or two to check the consistency.
  7. If the rice is too crisp, cook it for another minute and try again.
  8. The rice should be tender but still have a slight bite.
  9. Place the rice in a large sieve to drain.
  10. Rinse the rice by pouring hot water from a kettle over it.
  11. Cut the chestnut mushrooms into small pieces.
