Ingredients
- a cup of American long grain rice
- 250g pack of chestnut mushrooms
- 2 tbsp olive oil
- 2 large garlic cloves, finely chopped
- 5 tbsp chopped parsley
- 3 tbsp chopped chives
- finely grated zest of 1 lemon

- Fill a spacious pot with water and bring it to a boil.
- Add a heaped teaspoon of salt to the boiling water.
- Add the rice and stir once, then bring the pot back to the boil.
