  • some sunflower oil for greasing
  • 1 ½ packs (approx. 300 g) shortbread cookies (we used Fox’s Crinkle Crunch Butter)
  • To serve, 2 lemons, 1 peeled and juiced, 1 sliced
  • 400g mascarpone
  • 400 ml cream
  • 25g powdered sugar
  • 100g lemon curd
  • 10 mini meringues

Preparation steps

  1. Grease a 900 g loaf tin and line it with baking paper.
  2. Line the base with a row of cookies.
  3. In a bowl, mix the lemon zest and juice, mascarpone, cream, sugar and 50 g lemon curd until a thick mixture forms and the shape is retained.
  4. Put about a quarter of the mixture in a bowl and put it in the fridge for later.
  5. Layer the mascarpone and cookies in the mold and spoon the remaining lemon curd between the layers.
  6. Break up a few cookies to fill in any gaps.
  7. You should have about four layers of cookies, followed by a layer of cream.
  8. Wrap the can in plastic wrap and refrigerate for at least 8 hours, up to 48 hours.
  9. When ready to serve, unpack the tin and turn the pudding out onto a platter or board.
  10. Peel off the parchment.
  11. Crush 4 of the mini meringues to a crumbly consistency and stir into the reserved mascarpone mixture.
  12. Spread over the pudding and squeeze the remaining mini meringues and lemon slices on top.
  13. Leftovers will last for one day.
