Leek, ricotta and Gruyère tart

  • 500g pack of whole butter shortcrust pastry
  • piece of butter
  • 2 large leeks, sliced
  • 250g ricotta
  • 100 ml cream
  • 2 eggs
  • 2 tbsp chopped tarragon
  • 100g Gruyère or vegetarian alternative, grated

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Roll out the dough and line a 23cm loose-bottomed tart tin.
  3. Prick the base with a fork and line it with baking paper and baking beans.
  4. Place the tart pan on a baking tray and bake for 10 minutes.
  5. Remove beans and parchment and return to oven for another 5 minutes, until light golden.
  6. Reduce oven to 180°C/160°C fan/gas 4.
  7. Meanwhile, melt the butter in a large skillet and gently cook the leeks for 10 minutes, until softened.
  8. Mix the ricotta, cream, eggs, tarragon, a little salt and plenty of black pepper.
  9. Stir in the leeks and all but a handful of cheese.
  10. Pour the mixture into the tart base and sprinkle the remaining cheese on top.
  11. Bake for 25-30 minutes until golden brown and set.
  12. Let rest for 5 minutes.
  13. Carefully remove the tart from the tin and let it cool slightly on a wire rack.
  14. Serve warm.
