  • 1 eggplant, roughly diced
  • 1 tablespoon olive oil, plus a little more
  • 2 little kittens
  • ¼ tsp allspice, plus 2 good pinches
  • 2 bay leaves
  • 1 onion, halved and thinly sliced
  • 100g basmati rice
  • 2 tbsp pine nuts
  • ½ tsp ground cinnamon
  • good pinch of ground cloves
  • 200 ml hot chicken stock (or gluten-free alternative)
  • 2 tbsp currants
  • 1 large tomato, chopped
  • 1 tbsp chopped mint, plus a few leaves and sprigs for serving
  • 1 tbsp chopped dill, plus a few leaves and sprigs for serving
  • 2 tbsp pomegranate molasses
  • Sumac for sprinkling (optional – we used Bart)

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 4.
  2. Toss the eggplant in 1 tablespoon oil until well coated.
  3. Pour into a large roasting tin and then push to the edge of the tin to make room for the chicks.
  4. Rub some oil on the skin of the house chicks.
  5. Sprinkle with a pinch of allspice, salt and plenty of black pepper.
  6. Insert a bay leaf into each bird.
  7. Roast for 35 minutes.
  8. Let the pilaf cook for about 10 minutes before preparing it so that it is ready at the same time.
  9. Heat remaining 1 tablespoon oil in a medium skillet.
  10. Fry the onion until golden brown, 5-8 minutes.
  11. Add rice and pine nuts.
  12. Stir for about 1 minute.
  13. Add the spices, including ¼ teaspoon allspice.
  14. Pour in the broth.
  15. Stir in the currants.
  16. Cover the pan and cook for 7 minutes.
  17. Remove the lid from the pan.
  18. Add tomato, mint and dill.
  19. Cover and cook for another 2-3 minutes until the broth is absorbed and the rice is tender.
  20. Cover and set aside to keep warm.
  21. Drizzle the pomegranate molasses over the chicks and eggplant.
  22. Put them in the oven for another 10 minutes until they and the eggplant are soft.
  23. Set the chicks aside and let them rest for a few minutes.
  24. Add the eggplant to the pilaf.
  25. Serve the chicks whole or in portions and serve on top of the pilaf.
  26. Sprinkle with dill and mint leaves.
  27. Sprinkle with some sumac if desired.
