- 1 eggplant, roughly diced
- 1 tablespoon olive oil, plus a little more
- 2 little kittens
- ¼ tsp allspice, plus 2 good pinches
- 2 bay leaves
- 1 onion, halved and thinly sliced
- 100g basmati rice
- 2 tbsp pine nuts
- ½ tsp ground cinnamon
- good pinch of ground cloves
- 200 ml hot chicken stock (or gluten-free alternative)
- 2 tbsp currants
- 1 large tomato, chopped
- 1 tbsp chopped mint, plus a few leaves and sprigs for serving
- 1 tbsp chopped dill, plus a few leaves and sprigs for serving
- 2 tbsp pomegranate molasses
- Sumac for sprinkling (optional – we used Bart)
- Preheat the oven to 200°C/180°C fan/gas 4.
- Toss the eggplant in 1 tablespoon oil until well coated.
- Pour into a large roasting tin and then push to the edge of the tin to make room for the chicks.
- Rub some oil on the skin of the house chicks.
- Sprinkle with a pinch of allspice, salt and plenty of black pepper.
- Insert a bay leaf into each bird.
- Roast for 35 minutes.
- Let the pilaf cook for about 10 minutes before preparing it so that it is ready at the same time.
- Heat remaining 1 tablespoon oil in a medium skillet.
- Fry the onion until golden brown, 5-8 minutes.
- Add rice and pine nuts.
- Stir for about 1 minute.
- Add the spices, including ¼ teaspoon allspice.
- Pour in the broth.
- Stir in the currants.
- Cover the pan and cook for 7 minutes.
- Remove the lid from the pan.
- Add tomato, mint and dill.
- Cover and cook for another 2-3 minutes until the broth is absorbed and the rice is tender.
- Cover and set aside to keep warm.
- Drizzle the pomegranate molasses over the chicks and eggplant.
- Put them in the oven for another 10 minutes until they and the eggplant are soft.
- Set the chicks aside and let them rest for a few minutes.
- Add the eggplant to the pilaf.
- Serve the chicks whole or in portions and serve on top of the pilaf.
- Sprinkle with dill and mint leaves.
- Sprinkle with some sumac if desired.
