- 900g plums
- 2 Bramley apples (approx. 550 g)
- 450g pears
- 1 large mango
- 900g muscovado sugar
- 500 ml bottle of apple cider vinegar
- 2 medium onions (not red)
- 85 g chopped ginger (from a jar of ginger in syrup or crystallized)
- 3 cloves of garlic, finely chopped
- 1 tbsp mustard seeds
- 1 heaped teaspoon ground coriander
- 1 tsp crushed dried chili peppers
- 1 tsp salt
- 1 cinnamon stick
- Halve, stone and chop the plums (about the size of an apple pie – not too big, not too small).
- Place them in a large pot.
- Core, peel and chop apples and pears as well.
- Peel, stone and chop the mango.
- Add all the fruit to the pan.
- Add sugar, vinegar, onions, ginger, garlic, mustard seeds, coriander, crushed chilies and salt to the pan and place the cinnamon stick on top.
- Heat slowly for about 20 minutes, stirring occasionally, until the sugar has dissolved.
- Now, uncovered, allow the chutney to simmer evenly, stirring occasionally, until thickened and thickened but still containing a nice balance of syrupy juice. This takes about 1½ hours.
- You shouldn’t cook it until all the liquid has evaporated because it will thicken after it cools.
- Discard the cinnamon stick.
- Using a heatproof jug, pour the still hot chutney into sterilized jars.
- It will keep for about a year in a cool, dry place.
