- Add the tomatoes and ketchup to the onions and beef.
- Rinse the cans with the red wine (if you have it) or a little water and then add it to the pan.
- Season and bring to a simmer.
- Cook gently for 30 minutes until thick and juicy, then set aside.
- In the meantime, prepare the white sauce.
- Put everything in a pot, season and bring to the boil, stirring constantly.
- Don’t worry if it’s lumpy – if you whisk enough, the sauce will come together.
- Simmer, stirring, for 5 minutes until the mixture is smooth and thickened, then remove from the heat.
- If not using immediately, cover with plastic wrap and set aside.
- Make sure you divide everything so that you can make two lasagnas.
- Pour a thin layer of meat sauce into an ovenproof baking dish, drizzle with a little white sauce and sprinkle with a little mozzarella.
- Cover with a layer of lasagne sheets and top with two more sauces, more mozzarella and more lasagna sheets.
- Repeat the process again and then cover the top layer of lasagna with white sauce.
- Finally sprinkle some parmesan on top.
- The lasagne can now be chilled in the fridge for a day and stored for cooking or frozen for up to three months – see tips below.
- To cook, preheat the oven to 200°C/180°C fan/gas 6.
- Bake for 35-40 minutes until the top is brown and the edges are crispy.
