Lamb Scouse

  • 500g lamb neck fillet, cut into rough pieces
  • 1 tbsp flour
  • 3 tablespoons vegetable oil, more if necessary
  • 1 large onion, chopped
  • 4 carrots, cut into pieces
  • 350g beets, cut into pieces
  • 250 ml bitter beer (we used Cains Finest)
  • 250 ml chicken stock
  • 2 bay leaves
  • 2 sprigs of thyme
  • 2 beef bouillon cubes
  • 500g potatoes, cut into pieces
  • pickled red cabbage or cooked beetroot for serving (optional)

Preparation steps

  1. Dredge the lamb pieces in flour and season well.
  2. Heat 1 tablespoon oil in a large ovenproof baking dish over high heat.
  3. Fry the lamb in batches on all sides, adding more oil if necessary, then set aside on a plate.
  4. Reduce heat to medium and pour in 2 tablespoons oil.
  5. Add onions, carrots and beets, add a pinch of salt and cook for 8 minutes until soft and colored.
  6. Return the meat to the bowl along with the ale, stock and herbs.
  7. Crumble in the bouillon cubes and season well.
  8. Bring to a boil, then reduce heat and simmer.
  9. Place the potatoes on top of the stew.
  10. Cook for 2 hours until the meat is tender and the potatoes are soft.
  11. Serve with sauerkraut or beetroot if desired.
