  • Pack of 12 lamb meatballs (approx. 350 g)
  • 3 heaped tablespoons curry paste (or gluten-free alternative)
  • 400 g can of low-fat coconut milk
  • 400 g young new potatoes, larger ones cut in half
  • Pack mixed baby vegetables, e.g. E.g. baby corn, snow peas and snow peas (approx. 220 g).
  • Rice, for serving

Preparation steps

1. Heat a large skillet or wok with a lid
2. Fry the meatballs for about 5 minutes
3. If the meatballs stick, add a splash of water
4. Stir in curry paste, coconut milk and half a can of water
5. Bring the mixture to a boil
6. Add the potatoes
7. Cover the pan and cook for 20 minutes
8. Add the rest of the vegetables
9. Let the curry cook uncovered for about 3-4 minutes
10. Check that the vegetables and potatoes are to your liking
11. Adjust seasonings if necessary
12. Serve the lamb meatball curry immediately with rice

  3. Add the curry paste to the same pan and cook until fragrant, 1-2 minutes.
  4. Add the coconut milk and stir well to combine with the curry paste.
  5. Add the halved baby new potatoes to the pan, cover, and simmer until the potatoes are tender, about 10 minutes.
  6. Add the mixed vegetables to the pan and cook for another 5 minutes until the vegetables are tender-crisp.
  7. Return the cooked lamb meatballs to the pan and stir gently to coat with the curry sauce.
  8. Simmer for another 2-3 minutes to warm the meatballs through.
