Ingredients
- 2 cloves of garlic, finely chopped
- 2 tsp sea salt
- 4 tbsp olive oil
- Zest and squeeze 1 lemon
- 1 tbsp finely chopped fresh dill
- 700 g lean lamb, e.g. E.g. boneless neck fillet or leg, cleaned and then cut into large pieces
- Flatbread or flatbread for serving

Combine a 250g cup Greek yogurt;
½ cucumber, peeled, seeded,
then coarsely grated;
1 garlic clove, crushed;
3 tablespoons chopped dill;
2 tsp white wine vinegar; A
Put a pinch of sugar and a little salt in a bowl and mix well. Chill for 1 hour if time permits. For a change, try adding chopped mint in place of the dill.
Preparation steps
- Crush the garlic with sea salt in a pestle and mortar (or use a small food processor) until the garlic forms a paste.
- Mix oil, lemon juice, zest, dill and garlic.
- Add the lamb and mix well.
- Cover and marinate in the refrigerator for at least 2 hours or overnight.
- If you want to use bamboo skewers, soak them in cold water.
- If you prepared the lamb the day before, remove it from the refrigerator 30 minutes before cooking.
- Thread the meat onto the soaked or metal skewers.
- Heat the grill to high or have a hot grill pan or grill ready.
- Fry the skewers for 2-3 minutes on each side and pour the remaining marinade over them.
- Heat the pita or flatbread briefly and then fill it with the souvlaki.
- Add Greek salad (see “Wits with” at right) and tzatziki (below), if desired.
