  • 1 tsp cumin seeds

  • 800g extra lean boneless lamb, preferably leg or shoulder, cut into large pieces
  • 2 garlic cloves, crushed
  • 4 cm piece of fresh ginger root, peeled and cut into fine strips
  • 1 tbsp ground coriander
  • ½ tsp cayenne pepper
  • 1 tsp turmeric
  • 2 medium potatoes, peeled and cut into 4-6 pieces each
  • 400 g canned chopped tomatoes
  • 150g carton of low-fat natural yoghurt
  • 2 tbsp chopped fresh coriander leaves

Preparation steps

  1. Heat the oil in a large, heavy-based skillet over moderate heat until fairly hot.
  2. Sprinkle the cumin seeds on top.
  3. When they start to crackle, add cloves, cinnamon and bay leaves.
  4. Let cook for 30 seconds.
  5. Add the sliced ​​onions and cook, stirring occasionally, until soft and golden brown, 10 minutes.
  6. Add the lamb, increase the heat slightly and cook, stirring occasionally, until browned, 12-15 minutes.
  7. Add garlic and ginger, ground coriander, cayenne pepper, turmeric, potatoes and 1 teaspoon salt and cook for 2-3 minutes.
  8. Add the tomatoes and then pour in 300ml/1?2 pints of boiling water until the meat is just covered.
  9. Bring to a boil, then reduce heat, cover and simmer gently for 1 hour, or until lamb is tender.
  10. Add more water if necessary to make a gravy.

  12. If making it in advance, heat again for 10 minutes until bubbly, then swirl in the yogurt and garnish with cilantro.
