- 1 tsp cumin seeds
- 6 cloves

- 800g extra lean boneless lamb, preferably leg or shoulder, cut into large pieces
- 2 garlic cloves, crushed
- 4 cm piece of fresh ginger root, peeled and cut into fine strips
- 1 tbsp ground coriander
- ½ tsp cayenne pepper
- 1 tsp turmeric
- 2 medium potatoes, peeled and cut into 4-6 pieces each
- 400 g canned chopped tomatoes
- 150g carton of low-fat natural yoghurt
- 2 tbsp chopped fresh coriander leaves
- Heat the oil in a large, heavy-based skillet over moderate heat until fairly hot.
- Sprinkle the cumin seeds on top.
- When they start to crackle, add cloves, cinnamon and bay leaves.
- Let cook for 30 seconds.
- Add the sliced onions and cook, stirring occasionally, until soft and golden brown, 10 minutes.
- Add the lamb, increase the heat slightly and cook, stirring occasionally, until browned, 12-15 minutes.
- Add garlic and ginger, ground coriander, cayenne pepper, turmeric, potatoes and 1 teaspoon salt and cook for 2-3 minutes.
- Add the tomatoes and then pour in 300ml/1?2 pints of boiling water until the meat is just covered.
- Bring to a boil, then reduce heat, cover and simmer gently for 1 hour, or until lamb is tender.
- Add more water if necessary to make a gravy.
- (Prepare up to 2 days in advance, allow to cool, then store covered in the refrigerator.)
- If making it in advance, heat again for 10 minutes until bubbly, then swirl in the yogurt and garnish with cilantro.
