- 2 tbsp olive oil
- 2 tbsp chopped thyme leaves
- 4 lamb chops
- 2 small zucchini, cut into 1cm thick slices
- 200g sugar peas
- 1 tbsp red wine vinegar
- ½ tsp Dijon mustard
- ¼ tsp chili flakes (optional)
- small handful of mint leaves, roughly chopped
- small handful of basil leaves, roughly chopped
- 25g feta, crumbled
- Heat a griddle over high heat.
- Mix 1 tablespoon of oil with thyme and spices and brush over the lamb chops.
- Fry the chops for 3-4 minutes on each side, then turn them out and fry the fat in them for 1-2 minutes.
- Place the lamb chops on a plate, wrap in foil and let rest.
- Brush the zucchini with the remaining oil and season.
- Grill the zucchini for 2-3 minutes on each side until tender and showing signs of cooking – you may need to do this in 2 batches.
