Ingredients

  • 2 tbsp olive oil
  • 2 tbsp chopped thyme leaves
  • 4 lamb chops
  • 2 small zucchini, cut into 1cm thick slices
  • 200g sugar peas
  • 1 tbsp red wine vinegar
  • ½ tsp Dijon mustard
  • ¼ tsp chili flakes (optional)
  • small handful of mint leaves, roughly chopped
  • small handful of basil leaves, roughly chopped
  • 25g feta, crumbled

Preparation steps

  1. Heat a griddle over high heat.
  2. Mix 1 tablespoon of oil with thyme and spices and brush over the lamb chops.
  3. Fry the chops for 3-4 minutes on each side, then turn them out and fry the fat in them for 1-2 minutes.
  4. Place the lamb chops on a plate, wrap in foil and let rest.
  5. Brush the zucchini with the remaining oil and season.
  6. Grill the zucchini for 2-3 minutes on each side until tender and showing signs of cooking – you may need to do this in 2 batches.
  7. Meanwhile, cook the snap peas in a medium pot of boiling water for 2-3 minutes. Drain and place in a large bowl along with the zucchini.
  8. To make a dressing, mix vinegar, mustard, chili flakes (if using), mint and basil.
  9. Mix the zucchini and sugar peas in the dressing.
  10. Crumble the feta over the top and serve the vegetables with the lamb chops.
