- 1 large bone-in lamb leg (approx. 2 kg)
- 600g shallots, halved if they are particularly large
- 400g small apricots, halved and pitted
- 85 g whole almonds without skin
- 2 preserved lemons, pulp removed, peel and pulp finely chopped
- 1 tbsp Ras el Hanout
- 1 tbsp clear honey
- 150 ml hot chicken stock
- Small pack of coriander, leaves picked
- Couscous and natural yogurt to serve
- 4 tbsp olive oil
- 4 garlic cloves, crushed
- 1 tbsp ground cumin
- 2 tbsp clear honey
- 2 tsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp coriander seeds
- a pinch of saffron threads
- Score the leg of lamb all over and place in a large food bag or large baking dish.
- Crush the marinade ingredients with a pestle and mortar.
- Add some black pepper and rub the lamb with it.
- Marinate overnight or up to 24 hours.
- Preheat the oven to 140°C/120°C fan/gas 1.
- Place the lamb in a large roasting pan and scrape any remaining marinade from the top.
- Cover the can with foil and press the edges together to seal.
- Cook for 6-7 hours, basting every hour or so, until the meat is incredibly tender.
- Take the roaster out of the oven and increase the temperature to 200°C/180°C fan/gas 6.
- Pour the juice from the lamb into a measuring cup, let it cool slightly and skim off the fat.
- Put the shallots in the can along with the lamb and mix them with a little juice.
- Roast for 15 minutes, then add the apricots and almonds.
- Whisk the cooking juice with lemon, ras el hanout, honey and stock.
- Pour over the lamb and roast for another 20 minutes.
- Let it rest for 10 minutes, then sprinkle over the herbs.
- Serve with couscous and yogurt.
