Lamb, apricot and shallot tagine

The “Lamb, Apricot and Shallot Tagine” is a delicious dish inspired by the Moroccan fried lamb fish “Mechoui”. This perfectly slow-cooked recipe features a tantalizing marinade full of aromatic flavors and is complemented by a heavenly fruit sauce.

Ingredients

  • 1 large bone-in lamb leg (approx. 2 kg)
  • 600g shallots, halved if they are particularly large
  • 400g small apricots, halved and pitted
  • 85 g whole almonds without skin
  • 2 preserved lemons, pulp removed, peel and pulp finely chopped
  • 1 tbsp Ras el Hanout
  • 1 tbsp clear honey
  • 150 ml hot chicken stock
  • Small pack of coriander, leaves picked
  • Couscous and natural yogurt to serve
  • 4 tbsp olive oil
  • 4 garlic cloves, crushed
  • 1 tbsp ground cumin
  • 2 tbsp clear honey
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp coriander seeds
  • a pinch of saffron threads

Preparation steps

  1. Score the leg of lamb all over and place in a large food bag or large baking dish.
  2. Crush the marinade ingredients with a pestle and mortar.
  3. Add some black pepper and rub the lamb with it.
  4. Marinate overnight or up to 24 hours.
  5. Preheat the oven to 140°C/120°C fan/gas 1.
  6. Place the lamb in a large roasting pan and scrape any remaining marinade from the top.
  7. Cover the can with foil and press the edges together to seal.
  8. Cook for 6-7 hours, basting every hour or so, until the meat is incredibly tender.
  9. Take the roaster out of the oven and increase the temperature to 200°C/180°C fan/gas 6.
  10. Pour the juice from the lamb into a measuring cup, let it cool slightly and skim off the fat.
  11. Put the shallots in the can along with the lamb and mix them with a little juice.
  12. Roast for 15 minutes, then add the apricots and almonds.
  13. Whisk the cooking juice with lemon, ras el hanout, honey and stock.
  14. Pour over the lamb and roast for another 20 minutes.
  15. Let it rest for 10 minutes, then sprinkle over the herbs.
  16. Serve with couscous and yogurt.
