- 2 onions, quartered
- thumb-sized piece of ginger, peeled and roughly chopped
- 5 cloves of garlic
- 1 tbsp vegetable oil
- 1 heaped teaspoon of turmeric (see tip below)
- 2 heaped teaspoons ground cumin
- 2 heaped teaspoons ground coriander
- 1 teaspoon mild chili powder
- 5 cardamom pods
- 2 tbsp tomato paste
- 800g trimmed lamb shoulder, diced
- 400 g canned low-fat coconut milk (reserve 2 tbsp for serving)
- 200g chopped tomatoes from a can
- 2 ripe mangoes, sliced
- a handful of coriander
- Rice, chutneys and cucumber of your choice
Would you like to use curry paste instead?
If you prefer to use curry paste instead of spices, that’s no problem. Choose a medium heat paste and add it to the pan with the tomato puree.
- Preheat the oven to 160°C/140°C fan/gas 3.
- Place onions, ginger and garlic in a food processor and puree into a paste. If you don’t have a processor, just chop it very finely.
- Heat the oil in a deep, ovenproof baking dish and fry the paste for 10 minutes.
- Add some salt, the spices and the tomato puree and fry for another 2-3 minutes until aromatic.
- Stir in the lamb and cook for a few minutes until it changes color all over – it doesn’t need to brown.
- Add coconut milk, tomatoes and 100 ml water and bring to the boil.
- Cover with a lid, leaving a gap for some steam to escape, and place in the oven for 1½ hours.
- Stir in half the mangoes and cook for another hour, until the lamb is melted and tender.
- When ready, let the curry rest for 10 minutes, then spoon off any excess fat from the top.
- Partially stir in the remaining mangoes, sprinkle with coriander and drizzle with the reserved coconut milk.
- Serve with rice, chutneys and pickles of your choice.
