Ingredients

  • 4 duck breasts, each weighing about 200g
  • 3 oranges, peeled and sliced crosswise
  • 6 ripe figs, stems cut off
  • 1 tbsp olive oil
  • 2 tbsp dark muscovado sugar
  • 3 tbsp clear honey
  • finely grated zest and juice of 1 orange
  • 1 tbsp red wine vinegar
  • 1 fresh red chili pepper, deseeded and finely chopped
  • 1 tbsp coriander seeds, crushed
  • 1 cinnamon stick
  • 4 star anise
  • 4 bay leaves, plus extra for garnish

Preparation steps

  1. Place all syrup ingredients in a small, heavy-bottomed saucepan. Add 6 tablespoons water, season lightly with salt and pepper and simmer over medium heat for 8-10 minutes, until the syrup has reduced by just over half and is very sticky. Remove from heat.
  2. Place the duck breasts, skin side down, in a cold roasting pan (it’s unusual to start roasting in a cold pan, but with duck this is often a good idea – this will allow the fat to slowly come out from under the skin and the meat stays really moist.) . Roast slowly until the skin is golden brown, about 15 minutes. At least 100 ml of fat is dissolved from the skin. (Once the fat has cooled, store it in the refrigerator—it’s great for frying potatoes.)
  3. Preheat the oven to 180°C fan/200°C fan/gas. 6. Place the duck breasts, skin side up, on a rack in a roasting pan. Pour some syrup over it and let it sit for 2-3 minutes until sticky. Return the syrup that drips to the bottom of the roasting pan to the syrup in the pot and reheat to liquefy if necessary. Repeat this technique—spooning the syrup over the duck and letting it stand—until there are three or four layers and you’ve used most of the syrup. If it gets too thick, just add 1-2 tablespoons of water. Conversely, if it is too thin, add 1 more tablespoon of sugar. Arrange the orange slices around the duck and top with the final drizzle of syrup.
  4. Roast the duck for 8-12 minutes until done to your liking. In the meantime, cut the figs in half lengthwise, put them in a bowl and mix with the olive oil and plenty of spices. Heat a fluted cast-iron grill pan (or heavy skillet) on the stove until very hot, then char-grill the figs for 2 minutes on each side.
  5. Once the duck is cooked, remove it from the oven and let it rest for 3 minutes. Then cut each breast diagonally into two or three slices. Divide between four serving plates with the orange slices and figs and garnish with additional bay leaves and the star anise from the syrup.
