  • 75g flour
  • Pinch of chili powder
  • 1 egg
  • 1 garlic clove, crushed
  • 1 tbsp oil
  • 4 spring onions, cleaned and grated lengthways
  • 100g small cooked shrimps
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 red chili pepper, finely chopped
  • a pinch of sugar

  2. Mix flour, chili powder and a pinch of salt in a bowl.
  3. Mix 100 ml water, egg and garlic.
  4. Make a well in the center of the flour and pour in the water mixture, stirring constantly until a smooth dough forms.
  5. Heat the oil in a medium non-stick frying pan and fry the spring onions for 1 minute until they begin to soften.
  6. Sprinkle over shrimp and pour batter over top to cover.
  7. Cook over medium heat for 3-4 minutes or until the bottom is completely set and turning golden brown and the top begins to set.
  8. Turn over and cook on the other side for another 3-4 minutes until cooked through.
  9. Cut into pieces and serve with the dipping sauce.
