Korean BBQ wings

Ingredients

  • 12 chicken wings
  • 11?2 tbsp sunflower oil
  • 1 tbsp sesame seeds, toasted
  • 2 spring onions, thinly sliced ​​diagonally
  • 4 tbsp rice wine vinegar
  • 3 tbsp soy sauce
  • 5 tbsp golden powdered sugar
  • 2½ cm piece of ginger, peeled and grated
  • 1½ tbsp Sriracha chili sauce (or another hot chili sauce)
  • 4 tbsp tomato ketchup

Preparation steps

  1. Soak 12 wooden skewers in water for at least 10 minutes.
  2. For the sauce, add vinegar and soy to a jug.
  3. Heat the sugar and 1 tablespoon water in a small saucepan until the sugar is dissolved, then simmer until a deep caramel color is formed.
  4. Stand way back as it spits and pour in the vinegar and soy.
  5. Reduce the heat and let the sauce bubble for a few minutes. Then add the remaining sauce ingredients, stir well and cook until smooth and thickened, 5 minutes.
  6. Put aside.
  7. Light the grill (or set your oven’s broiler to medium).
  8. Once the coals have gone out, spread them into an even layer.
  9. Trim the tips of the chicken wings, then stretch them out as straight as possible and insert a skewer through the length of each wing.
  10. Brush the skin with the oil and season.
  11. Cook the wings on the grill or under the broiler for 10 minutes on each side, until the chicken is cooked through and the skin is golden brown and crispy.
  12. Place the skewers on a large plate.
  13. Pour two-thirds of the sauce into a bowl, reserving the rest in the pan.
  14. Using a brush, coat each skewer well with the sauce from the bowl, then place back on the grill or broil and cook for another 2-3 minutes on each side until the sauce is caramelized.
  15. Transfer the skewers to a serving platter.
  16. Reheat the reserved sauce, adding a splash of water if necessary to loosen it, then drizzle over the skewers.
  17. Top with sesame seeds and spring onions.
