Ingredients
- 2 tbsp vegetable oil
- 450g boneless, skinless chicken thighs, cut into pieces

- 3 fresh green or red chili peppers, deseeded and finely chopped
- 2 tbsp fish sauce (Nam Pla)
- 2 tsp dark soy sauce
- 2 tsp sugar
- a large handful of Thai or common basil leaves

- Add 1 tablespoon of oil to the hot wok.
- Once the oil is hot, add the chicken to the wok.
- Stir-fry the chicken over high heat until browned all over, 8-10 minutes.
- Remove the chicken from the pan with a slotted spoon and set aside.
- Reheat the wok and add the remaining oil.
- Add garlic and shallots and stir-fry until golden brown, 3 minutes.
- Return the chicken to the wok.
- Add chilies, fish sauce, dark soy sauce and sugar to the wok.
- Stir the mixture over high heat for another 8-10 minutes until the chicken is cooked through.
- Stir in the basil leaves.
- Serve the fried chicken with chili and basil immediately.
