  • 2 tbsp vegetable oil
  • 450g boneless, skinless chicken thighs, cut into pieces
  • 3 tbsp coarsely chopped garlic
  • 3 tbsp finely chopped shallots
  • 3 fresh green or red chili peppers, deseeded and finely chopped
  • 2 tbsp fish sauce (Nam Pla)
  • 2 tsp dark soy sauce
  • 2 tsp sugar
  • a large handful of Thai or common basil leaves

Preparation steps

  1. Heat a wok or large skillet until very hot.
  2. Add 1 tablespoon of oil to the hot wok.
  3. Once the oil is hot, add the chicken to the wok.
  4. Stir-fry the chicken over high heat until browned all over, 8-10 minutes.
  5. Remove the chicken from the pan with a slotted spoon and set aside.
  6. Reheat the wok and add the remaining oil.
  7. Add garlic and shallots and stir-fry until golden brown, 3 minutes.
  8. Return the chicken to the wok.
  9. Add chilies, fish sauce, dark soy sauce and sugar to the wok.
  10. Stir the mixture over high heat for another 8-10 minutes until the chicken is cooked through.
  11. Stir in the basil leaves.
  12. Serve the fried chicken with chili and basil immediately.
