  • 1 kg Jerusalem artichoke
  • 75g butter
  • 1 crushed garlic clove
  • 3 sprigs of thyme
  • 75g diced butter
  • 1 lemon, juiced

Preparation steps

  1. Peel 1 kg of Jerusalem artichoke, cut it into thin slices and put it in a bowl with water and lemon juice.
  2. Heat 75g butter in a large frying pan over medium heat.

  4. Cook for 20 minutes and gradually add another 75g of diced butter, cube by cube.
  5. Brush the artichokes regularly with the butter so that they are always covered with foamy butter.
  6. Continue cooking until the artichokes have a rich, toasted color.
  7. Just before serving, mix the artichokes with the juice of one lemon.
  8. Season to taste.
