Preparation steps

  2. Pull out the roasting pan on its rack, fill it two-thirds full with boiling water from the kettle and carefully slide it back in.

  5. Place the baking paper on the foil and brush it with butter.

  8. Stir through the suet, pour in the milk and use a kitchen knife to form a sticky dough.
  9. Depending on your flour, you may need a drop more milk.
  10. Place the dough on a floured work surface, quickly pat it down and then roll it out into a square measuring approximately 25 x 25 cm.
  11. Spread the jam all over, leaving a gap on one edge, then roll it up from the opposite edge.
  12. Press the jam-free edge into the dough where it meets and roughly pinch the ends together as well.
  13. Carefully lift it onto the greased paper, joining side down (a flat baking sheet might be helpful here).
  14. Loosely roll up the paper and foil, then fold at the edges and ends to seal.
  15. The chubby puffy puffs up quite a bit as it cooks, so don’t wrap it too tightly.
  16. Lift the package directly onto the rack above the dish and let it cook for 1 hour.
  17. Let the pudding rest for five minutes before unwrapping it. Then carefully open the foil and paper and cut into thick slices to serve.
