Ingredients
- 500g pack of fully cooked polenta
- 2 tbsp olive oil
- 2 chicken breasts
- 25g dried breadcrumbs
- 25g Parmesan
- 125g ball mozzarella
- 4 ciabatta or burger buns, lightly toasted
- Salad leaves for serving
- SunBlush tomatoes for serving
- fresh basil pesto for serving
Preparation steps
- Preheat oven to 200°C/180°C fan/gas 6.
- Cut the polenta into thick pieces and rub all over with a little oil.
- Spread on a baking sheet and bake until golden brown, 20 minutes.
- Cut each chicken breast in half, flatten slightly with a rolling pin or heavy can, then rub all over with oil.
- Spread the breadcrumbs and Parmesan on a plate, then dip the chicken into the mixture to coat.
- Place the chicken on another baking sheet and cook until crispy and cooked through, 10-12 minutes.
- Place a slice of mozzarella on each chicken breast and return to the oven until it begins to melt.
- Stack the burgers on buns with some lettuce leaves, tomatoes and a dollop of pesto.
- Serve with the polenta chips.
