  • 6 sea bass fillets with skin, 175-200 g each
  • 250g pack of cherry tomatoes
  • a handful of black Italian olives
  • 4-5 tbsp fish stock (preferably from the refrigerated section)
  • 4-5 tbsp dry white wine
  • Basil, for serving

  1. Preheat the oven to 190°C/fan 170/gas 5.
  2. Slice the potatoes and cook for 6-8 minutes until just tender, then drain.
  3. Butter or oil a large baking dish or two smaller shallow baking dishes that will hold the fish fillets in a single layer (a few roasting dishes would work well).
  4. Spread the potatoes on the bottom of the molds.
  5. Halve the tomatoes and sprinkle over them along with the olives.
  6. Place the fish fillets among the other ingredients.

  8. Cover the dishes with foil and seal the edges.
  9. Bake for 15 minutes until the fish is tender.
