  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 450g pack of Lincolnshire sausages, meat squeezed out
  • 200 g vacuum-packed canned or jarred chestnuts, very roughly chopped (see tip below)
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon chopped rosemary
  • 1 tsp fennel seeds
  • 1 glass of full-bodied red wine
  • 500g cardboard passata
  • 500 g large pasta shells or pappardelle
  • small package of curly parsley, finely chopped
  • Parmesan or Grana Padano for serving


Preparing raw chestnuts: Peel

To peel, use the tip of a sharp knife to cut a slit in the side of each chestnut, then drop a few at a time into a pot of boiling water. Cook for seven minutes, then spoon the chestnuts onto a tea towel. Once cool enough to touch, peel off the outer shell and fibrous inner membrane.

Preparing raw chestnuts: troubleshooting

If your chestnuts are too difficult to peel, put them in the microwave for a minute and then try again. To fully cook them, return them to the water and simmer for 30 minutes.

Preparing raw chestnuts: Roasting

To roast, cut a slit into each chestnut with the tip of a sharp knife. Transfer to a roasting tin and cook in a hot oven for 20-30 minutes, shaking the tin occasionally until the slits begin to open.

Preparation steps

  1. Heat the oil in a large frying pan.
  2. Fry the onion for 5 minutes until it softens.
  3. Add the sausage meat and chestnuts to the pan.
  4. Roast for another 10-12 minutes, breaking up the meat with a wooden spatula or spoon as it cooks.
  5. Keep the heat fairly high and stir frequently.
  6. When the meat and chestnuts are golden brown, add garlic, rosemary and fennel seeds.
  7. Cook for another 2 minutes.
  8. Squirt in the wine and let most of it cook away.
  9. Add the passata.
  10. Cover the sauce and simmer for 10 minutes.
  11. Cook the pasta in plenty of salted water according to the package instructions.
  12. Reserve one cup of pasta cooking water.
  13. Drain the noodles well.
  14. Mix the pasta, 3 tablespoons of the reserved water, the ragout and most of the parsley.
  15. Season to taste.
  16. Divide between bowls.
  17. Add a pinch of black pepper.
  18. Sprinkle the remaining parsley on top.
  19. Add a handful of Parmesan shavings.
