Ingredients

  • 8 skinless, bone-in chicken thighs
  • 8 slices of prosciutto or other raw ham
  • 2 tbsp olive oil
  • 2 whole garlic cloves
  • 800g tomatoes (a mix of smaller yellow and red tomatoes looks good)
  • 175 ml dry white wine
  • 400g cannellini beans or other canned white beans, rinsed and drained
  • large bunch of basil

  1. Season the chicken thighs all over with salt and freshly ground black pepper.
  2. Cut 8 sprigs of basil (about 3 leaves per sprig) and place one on each chicken thigh.
  3. Wrap each leg in a piece of ham, with the ends tucked under.
  4. Preheat the oven to 160°C/fan 140°C/gas 3.
  5. Heat the oil in a large skillet over two of the burners on the stove.
  6. Add the chicken and fry for about 4 minutes or until the ham is just crispy and the chicken is lightly golden. Rotate and repeat.
  7. Meanwhile, halve the garlic bulbs in half and halve the tomatoes if they are small or quarter if they are large.
  8. Pluck the leaves from the rest of the basil.
  9. Once the chicken is browned on both sides, add all the tomatoes, half the basil and the wine.
  10. Season, then cover with foil and cook slowly in the oven for 40 minutes.
  11. Remove from the oven and increase the heat to 220°C/fan 200°C/gas mark 7.
  12. Remove the foil from the pan and stir the beans into the tomato juice.
  13. Return to the oven, uncovered, for 30 minutes, until the tomatoes, chicken and garlic begin to crisp around the edges and the chicken is very tender.
  14. Shortly before serving, roughly tear the remaining basil into pieces and then stir it in or spread it in the pan.
