  • about 1kg butternut squash, cut into pieces
  • 2 carrots, chopped
  • 3 tbsp korma paste
  • small package of cilantro, stems and leaves chopped but separated
  • 1 large onion, chopped
  • 1.2l vegetable broth
  • ½ x 400 g can of low-fat coconut milk
  • 2 low-fat naan bread
  • 2 tsp garlic oil
  • 2 tsp poppy seeds

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. In a mixing bowl, mix the vegetables with 2 tablespoons of curry paste and the coriander stalks. Season with salt and pepper.
  3. Spread the seasoned vegetables on 2 baking sheets lined with baking paper.
  4. Roast the vegetables in the preheated oven for 20 minutes.
  5. Remove the trays from the oven and turn the vegetables. Swap the trays in the oven to ensure even cooking.
  6. Place the trays back in the oven and cook for another 15 minutes.
  7. Heat the remaining curry paste with a splash of water in a large pot.
  8. Add the chopped onion to the pot and cook until soft.

  11. Put the soup back on the stove and pour in the coconut milk. Warm through.
  12. In a separate bowl, mix garlic oil and brush on the naan breads.
  13. Sprinkle the naan breads with seeds and put them in the oven for 3 minutes.
  14. Serve the soup with the freshly baked naan bread.
