  • 500g bag of long grain rice
  • 1 tsp turmeric
  • small bunch of coriander, leaves roughly chopped, stalks set aside
  • 100g bag of roasted cashews, ½ very coarsely chopped
  • 1 cucumber, deseeded and cut into pieces
  • 1 large red onion, finely chopped
  • approx. 110g pack of pomegranate seeds
  • 400g canned black beans, drained and rinsed
  • 2 x approx. 130g packs of cooked chicken tikka pieces, chopped
  • Natural yogurt and mini poppadum chips for serving (optional)
  • 4 tbsp mango chutney
  • 1 tbsp sunflower oil
  • 1 tbsp brown sugar
  • 1 tbsp medium curry powder, plus 1 tsp for the rice
  • Depending on size, juice 1½-2 lemons

  1. Cook the rice according to package instructions, but add turmeric and 1 teaspoon curry powder to the cooking water.
  2. Drain the cooked rice well and spread it on a paper towel-lined tray to cool.
