- 500g bag of long grain rice
- 1 tsp turmeric
- small bunch of coriander, leaves roughly chopped, stalks set aside
- 100g bag of roasted cashews, ½ very coarsely chopped
- 1 cucumber, deseeded and cut into pieces

- approx. 110g pack of pomegranate seeds
- 400g canned black beans, drained and rinsed
- 2 x approx. 130g packs of cooked chicken tikka pieces, chopped
- Natural yogurt and mini poppadum chips for serving (optional)
- 4 tbsp mango chutney
- 1 tbsp sunflower oil
- 1 tbsp brown sugar
- 1 tbsp medium curry powder, plus 1 tsp for the rice
- Depending on size, juice 1½-2 lemons
