Ingredients

  • 2 tbsp toasted flaked almonds
  • 100 ml / 3 ½ condensed milk
  • 300 ml / ½ pt cream
  • 1 ½ tbsp sherry
  • 1 tsp vanilla paste or extract
  • A few drops of yellow food coloring if desired
  • 1 sheet of gelatin
  • 400g / 14oz raspberries
  • 3 tbsp powdered sugar
  • 12 biscuit trifle fingers

Preparation steps

  1. Line a 900 g loaf tin well with cling film.
  2. Scatter the almonds on the bottom of the mold.
  3. Divide the condensed milk and cream evenly into two separate bowls.
  4. Put sherry in one bowl and vanilla paste and food coloring in the other.
  5. Place the bowl of vanilla mixture in the refrigerator for later.
  6. Whisk the sherry mixture until thick.
  7. Pour the sherry cream onto the almonds and smooth the surface.
  8. Cover the container with plastic wrap and freeze until solid, about 1 hour.
  9. Beat the vanilla cream until thick.
  10. Pour the vanilla cream over the frozen sherry cream layer.
  11. Smooth the surface and place in the freezer for another hour until the dough is firm.
  12. Soak gelatine in a little cold water.
  13. Using a food processor, combine half the raspberries with the powdered sugar and water.
  14. Sift the mixture into a small saucepan and heat gently until warm.
  15. Once it starts to boil, remove from the heat and add the gelatin.
  16. Stir until the gelatin melts.
  17. Crush half of the remaining raspberries and stir into the mixture.
  18. Allow the mixture to cool.
  19. Spread the raspberry mixture evenly over the vanilla layer.
  20. Press sponge fingers lightly into the mixture.
  21. Freeze until solid – preferably overnight.
  22. Remove from the freezer about 15 minutes before serving.
  23. Place the loaf pan upside down on a serving plate.
  24. Peel off the cling film and cut into clean slices with a sharp knife.
