Hot Smoked Salmon Picnic Loaf

Ingredients

  • 140g mayonnaise
  • 3 tbsp whole grain mustard
  • Grate the zest of 1 lemon and 1 tablespoon of juice
  • small bunch of dill, finely chopped
  • 2 x long, flat breads (we used long ciabatta)
  • 4 fillets of hot smoked salmon (approx. 320 g), without skin and in flakes
  • 2 tbsp small capers, rinsed
  • 1 small cucumber, cut into thin slices
  • 100g radishes, cut into thin slices
  • 2 large handfuls of arugula, watercress or pea shoots

Preparation steps

  1. Mix mayonnaise, mustard, lemon zest, dill and some spices in a bowl.
  2. Divide the loaves in half lengthwise and spoon some of the bread out of the bottom of each loaf, creating a cavity for filling.
  3. Spread the mustardy mayonnaise on the bread.
  4. Mix the salmon flakes with the lemon juice and capers and distribute them among the loaves, filling the hollow base of each.
  5. Top with cucumber, radishes and lettuce leaves and press the lid on.
  6. Wrap each loaf in parchment paper, tie with string, then place on a tray in the refrigerator.
  7. Weigh down the loaves by placing a cutting board and a few heavy cans on top.
  8. Allow to rest for at least 2 hours or up to 1 day before eating – this will press the bread and make it easier to transport and eat.
  9. Place in ice packs and cut into sandwiches to eat.
