  • 2 tbsp extra virgin olive oil
  • Juice ½ lemon
  • 1 garlic clove, finely chopped
  • 2 tbsp coarsely chopped tarragon
  • 1 tsp clear honey
  • 1 small red onion, thinly sliced
  • 400g can of Puy lentils, rinsed and drained
  • 140g hot smoked salmon
  • 20g pack of flat-leaf parsley, leaves picked
  • 1 pomegranate, seeds removed

Prepare the salad as before, but omit it
Substitute salmon and tarragon
Mint. Mix 2 tsp harissa with 2 tbsp
Add yogurt and 2 sliced,
Chicken breast without skin for 10 minutes.
Grill the chicken for 4-6 minutes each
Set aside and serve with the salad.
