Preparation steps

  1. Bring the milk to the boil, then remove from the heat and add the butter.
  2. Let cool until it reaches hand temperature.
  3. Place flour, salt, sugar and yeast in a bowl.
  4. Make a well in the middle.
  5. Pour in the warm milk and butter mixture and then add the egg.
  6. Mix well with a wooden spoon and then mix everything with your hands until a sticky dough forms.
  7. Transfer the dough to a lightly floured work surface and knead it by holding it with one hand, stretching it with the heel of the other hand, and then folding it back on itself.
  8. Repeat for 5 minutes until the dough is smooth and elastic.
  9. Place the dough in a lightly oiled bowl.
  10. Cover with oiled cling film and let rise in a warm place for 1 hour or until doubled in size and a finger press leaves a dent.
  11. While the dough is still in the bowl, add the sultanas, mixed peel, orange peel, apple and cinnamon.
  12. Knead the dough and make sure everything is well distributed.
  13. Let the dough rise for another hour until it has doubled in size, covering it again with some well-oiled cling film to prevent the dough from forming a crust.
  14. Divide the dough into 15 even pieces (about 75g each).
  15. Roll each piece into a smooth ball on a lightly floured work surface.
  16. Arrange the rolls on one or two baking sheets lined with parchment paper, leaving enough space for the dough to expand.
  17. Cover (but do not wrap) with some oiled cling film or a clean tea towel and then leave to rise for another hour.
  18. Preheat oven to 220°C/200°C fan/gas 7.
  19. For the cross, mix the flour with approx. 5 tablespoons of water. Add water 1 tablespoon at a time, adding just enough to make a thick paste.
  20. Fill into a piping bag with a small nozzle.
  21. Run a line down each row of buns, then repeat the process in the other direction to form crosses.
  22. Bake on the middle shelf of the oven for 20 minutes until golden brown.
  23. Gently heat the apricot jam until it melts, then strain to remove any bits.
  24. While the jam is still warm, spread it over the top of the warm rolls and allow to cool.
