  13. Let the dough rise for another hour until it has doubled in size, covering it again with some well-oiled cling film to prevent the dough from forming a crust.
  14. Divide the dough into 15 even pieces (about 75g each).
  15. Roll each piece into a smooth ball on a lightly floured work surface.
  16. Arrange the rolls on one or two baking sheets lined with parchment paper, leaving enough space for the dough to expand.
  17. Cover (but do not wrap) with some oiled cling film or a clean tea towel and then leave to rise for another hour.
  18. Preheat oven to 220°C/200°C fan/gas 7.
  19. For the cross, mix the flour with approx. 5 tablespoons of water. Add water 1 tablespoon at a time, adding just enough to make a thick paste.
  20. Fill into a piping bag with a small nozzle.
  21. Run a line down each row of buns, then repeat the process in the other direction to form crosses.
  22. Bake on the middle shelf of the oven for 20 minutes until golden brown.
  23. Gently heat the apricot jam until it melts, then strain to remove any bits.
  24. While the jam is still warm, spread it over the top of the warm rolls and allow to cool.
