  • 3 large floury baking potatoes, preferably King Edward
  • 3 large egg yolks
  • 142 ml carton of double cream
  • 3-4 tbsp grated hot horseradish
  • 1-2 tbsp fresh lemon juice
  • 50g butter

Preparation steps

  1. In the morning, preheat the oven to 220 °C/gas 7/fan 200 °C.
  2. Bake the potatoes until the inside is soft, about 1 hour.
  3. Whisk egg yolks, cream, 3 tablespoons horseradish and 1 tablespoon lemon juice in a large bowl.
  4. Cut the potatoes in half, add the insides to the bowl, reserving the skins.
  5. Mash the potato and spices together.
  6. Season with salt and a little pepper.
  7. Taste and add more horseradish and/or lemon juice if necessary.
  8. Put the potatoes back in the bowl.
  9. Place the potatoes on a baking sheet.
  10. Cover loosely with plastic wrap and store in a cool place, not refrigerated.
  11. Half an hour before serving, spread the filling with pieces of butter.
  12. Bake with the cake in the oven for 25-30 minutes until the top is browned.
