  • 1 tbsp olive oil
  • 8 bone-in chicken thighs, skin removed
  • 2 onions, finely chopped
  • 350g parsnips, cut into sticks
  • 300 ml vegetable broth
  • 2 tbsp whole grain mustard
  • 2 tbsp clear honey
  • a few sprigs of thyme
  • flat-leaf parsley for serving (optional)

  1. Heat half the oil in a large skillet or shallow Dutch oven with a lid.
  2. Fry the chicken until golden brown and then set aside.
  3. Heat the remaining oil and then cook the onions for 5 minutes until soft.
  4. Place the thighs back between the onions and add the parsnips.
  5. Mix the broth with mustard and honey and pour in.
  6. Scatter over the thyme and bring to a simmer.
  7. Cover and then cook for 30 minutes (or longer, see tip) until the chicken is tender.
  8. Season.
  9. Serve with steamed vegetables.
