Ingredients
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 garlic cloves, crushed
- 1 teaspoon dried oregano
- ½ lemon, grated and juiced
- 2 tbsp olive oil
- 8 lamb chops
- 1 tbsp rose harissa
- 1 tbsp honey
Preparation steps
- Mix the cumin, coriander, garlic, oregano, lemon zest and juice, the olive oil and some spices in a large bowl.
- Place the lamb chops on a board and, using a mallet or rolling pin, lightly tap the eye (the meatiest part) of each one to flatten it slightly.
- Add the chops to the bowl with the marinade and turn until completely coated.
- Cover and let marinate for at least 30 minutes. Will keep refrigerated for up to a day.
- If the lamb is chilled, remove it from the refrigerator 30 minutes before cooking.
- Mix harissa and honey in a bowl.
- Cook the lamb chops under a hot grill, in a grill pan over high heat, or over ash coals on the grill for 5-7 minutes on each side.
- During the last 1-2 minutes of cooking, brush the chops with the harissa mixture.
- When the chops are done, they should be caramelized and the fat sizzling – they will be slightly pink in the center.
- Transfer the lamb chops to a plate, cover and let rest for a few minutes before serving.
