Ingredients

  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 garlic cloves, crushed
  • 1 teaspoon dried oregano
  • ½ lemon, grated and juiced
  • 2 tbsp olive oil
  • 8 lamb chops
  • 1 tbsp rose harissa
  • 1 tbsp honey

Preparation steps

  1. Mix the cumin, coriander, garlic, oregano, lemon zest and juice, the olive oil and some spices in a large bowl.
  2. Place the lamb chops on a board and, using a mallet or rolling pin, lightly tap the eye (the meatiest part) of each one to flatten it slightly.
  3. Add the chops to the bowl with the marinade and turn until completely coated.
  4. Cover and let marinate for at least 30 minutes. Will keep refrigerated for up to a day.
  5. If the lamb is chilled, remove it from the refrigerator 30 minutes before cooking.
  6. Mix harissa and honey in a bowl.
  7. Cook the lamb chops under a hot grill, in a grill pan over high heat, or over ash coals on the grill for 5-7 minutes on each side.
  8. During the last 1-2 minutes of cooking, brush the chops with the harissa mixture.
  9. When the chops are done, they should be caramelized and the fat sizzling – they will be slightly pink in the center.
  10. Transfer the lamb chops to a plate, cover and let rest for a few minutes before serving.
