  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 garlic cloves, crushed
  • 1 teaspoon dried oregano
  • ½ lemon, grated and juiced
  • 2 tbsp olive oil
  • 8 lamb chops
  • 1 tbsp rose harissa
  • 1 tbsp honey

Preparation steps

  1. Mix the cumin, coriander, garlic, oregano, lemon zest and juice, the olive oil and some spices in a large bowl.
  2. Place the lamb chops on a board and, using a mallet or rolling pin, lightly tap the eye (the meatiest part) of each one to flatten it slightly.
  3. Add the chops to the bowl with the marinade and turn until completely coated.
  4. Cover and let marinate for at least 30 minutes. Will keep refrigerated for up to a day.
  5. If the lamb is chilled, remove it from the refrigerator 30 minutes before cooking.
  6. Mix harissa and honey in a bowl.
  7. Cook the lamb chops under a hot grill, in a grill pan over high heat, or over ash coals on the grill for 5-7 minutes on each side.
  8. During the last 1-2 minutes of cooking, brush the chops with the harissa mixture.
  9. When the chops are done, they should be caramelized and the fat sizzling – they will be slightly pink in the center.
  10. Transfer the lamb chops to a plate, cover and let rest for a few minutes before serving.

1. Rich in protein

Lamb chops are an excellent source of high-quality protein. Protein is essential for building and repairing tissue, promoting muscle growth, and supporting a healthy immune system.

2. Packed with essential nutrients

Lamb is a good source of essential nutrients, including vitamin B12, niacin, zinc and selenium. Vitamin B12 is necessary for nerve function and red blood cell production, while niacin supports brain health and zinc and selenium play important roles in immune function and antioxidant defense.

3. Anti-inflammatory benefits

Harissa, a spicy paste made from chili peppers, has anti-inflammatory properties. It contains capsaicin, which can help reduce inflammation and relieve pain. Eating foods with anti-inflammatory properties can potentially reduce the symptoms of chronic diseases such as arthritis.

4. Digestive health

Honey has long been used as a natural remedy for digestive problems. It contains enzymes that aid digestion and promote the growth of beneficial intestinal bacteria. Additionally, honey has antioxidant and antibacterial properties that can help protect the digestive system.

5. Energy boost

The combination of honey and lamb provides a great source of energy. Honey is a natural sweetener that releases a steady stream of glucose into the bloodstream, providing sustained energy. Using olive oil to marinate and cook the lamb chops provides heart-healthy monounsaturated fats. These fats can help lower cholesterol, lower blood pressure and reduce the risk of heart disease.
