Ingredients

  • 175g lightly salted butter, softened, plus a little butter for greasing
  • 85g clear honey (I used blossom honey), plus 4 tbsp for drizzling and a little more for serving
  • 85g powdered sugar
  • 85g ground almonds
  • 200g plain flour
  • 1 tsp baking soda
  • 1 teaspoon Baking powder
  • 100 ml natural yogurt
  • 2 large eggs, one separated, plus 1 additional egg white
  • 85g almond flakes

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease a 900g loaf tin and place a strip of baking paper over it, overhanging either end – this will make it easier to lift the cake out when it’s ready.
  3. Place butter, honey, powdered sugar, ground almonds, flour, baking powder, bicarb and yogurt in a large mixing bowl.
  4. Place the egg whites in another small bowl. Add the egg yolk and remaining whole egg with all other ingredients.
  5. Beat the egg white until stiff.
  6. Add your electric beater to the other bowl with the ingredients and beat until smooth.
  7. Stir in a third of the egg white, carefully fold in the rest with a wooden spoon.
  8. Pour the mixture into the prepared tin, sprinkle over the flaked almonds and bake on the middle to lower rack of the oven for 55 minutes, until golden brown and a skewer inserted into the center comes out clean.
  9. Remove the cake from the oven.
  10. Drizzle quickly with 2 tablespoons of honey and sprinkle with a small pinch of fine salt.
  11. Place in the oven again for 5 minutes.
  12. Remove from the oven, drizzle with 2 more tablespoons of honey and then let cool in the tin on a wire rack.
  13. Use a knife to loosen stuck almonds from the edge. Then, using the parchment overhangs, carefully lift the cake out of the pan.
  14. Eat in slices, drizzle with a little honey if desired.
