Ingredients
- generous pinch of saffron
- 200g frozen peas
- 3 x 275g packets of pre-cooked basmati rice
- 3 fried chicken breasts, skinned and torn into pieces
- 16 oz bag frozen luxury seafood cocktail (cooked shrimp, squid rings and mussels), thawed and rinsed
- 3 roasted red peppers (in oil, not vinegar), cut into large pieces
- 175g black olives
- a handful of chopped fresh parsley
- 1 lemon, cut into wedges
Preparation steps
- Bring 400 ml water with the saffron to the boil in a large pot.
- Add the peas to the boiling water and simmer for 2-3 minutes until just cooked through and the saffron is infused.
- Add the rice and gently stir the pan until it turns yellow.
- Stir in precooked chicken, seafood, peppers and olives.
- Cover the pan and cook over medium-high heat, stirring occasionally, until thoroughly heated, about a minute.
- Fold in the parsley.
- Arrange the paella on a large, warm platter.
- Serve the paella with lemon wedges arranged on the sides.
