- Heat the oil in a large skillet or ovenproof Dutch oven.
- Fry the potatoes until dark golden on both sides, about 10-15 minutes.
- Add the garlic, thyme, rosemary, bay leaves and zest to the pan.
- Pour in enough broth to come halfway up the potatoes.
- Let simmer for 20-30 minutes.
- Turn the potatoes and fry on the other side for another 20-30 minutes.
- Add more broth if it evaporates during cooking.
- Continue cooking until the potatoes are really tender and most of the broth has been used up.
- Season well.
