  • 1½ kg small floury potatoes, such as Desirée or Maris Piper, peeled
  • 4 tbsp olive oil
  • 3 cloves of garlic, crushed
  • 3 sprigs of thyme
  • 3 sprigs of lemon thyme
  • 2 rosemary sprigs
  • 3 bay leaves
  • Peeled peel of a lemon, peeled with a peeler
  • approx. 600 ml gluten- and wheat-free chicken or vegetable stock (see label)

Preparation steps

  1. Cut off the top and bottom of each potato so that it lies flat on both sides.
  2. Heat the oil in a large skillet or ovenproof Dutch oven.
  3. Fry the potatoes until dark golden on both sides, about 10-15 minutes.
  4. Add the garlic, thyme, rosemary, bay leaves and zest to the pan.
  5. Pour in enough broth to come halfway up the potatoes.
  6. Let simmer for 20-30 minutes.
  7. Turn the potatoes and fry on the other side for another 20-30 minutes.
  8. Add more broth if it evaporates during cooking.
  9. Continue cooking until the potatoes are really tender and most of the broth has been used up.
  10. Season well.
  11. Serve and enjoy!
