Ingredients

  • 1 tbsp olive oil
  • 2 carrots, chopped
  • 1 large onion, finely chopped
  • 1l vegetable broth
  • 400 g canned chopped tomatoes
  • 200g frozen mixed peas and beans
  • 250g pack of freshly filled tortellini (we used spinach and ricotta)
  • Handful of basil leaves (optional)
  • grated Parmesan (or vegetarian alternative) for serving

Place a cup of pesto in the refrigerator and stir
Add a spoonful to the soup just before serving.Make a casserole out of it
Ricotta and basil casserole: Preheat the oven to 200°C/fan oven 180°C.
Gas 6. Put the pasta in a baking dish and season
Add the tomatoes, stir in the basil and spoon over the top.
In a bowl, mix the peas and beans, 250g cup
Ricotta and a handful of grated Parmesan. Dot the mixture
pour over the pasta, then sprinkle with more Parmesan
Bake for 20-25 minutes until golden brown.

  2. Sauté the carrots and onions for 5 minutes until they begin to soften.
  3. Add broth and tomatoes and simmer for 10 minutes.
  4. 5 minutes before the end, add the peas and beans.
  5. Once the vegetables are soft, stir in the noodles.
  6. Bring to a boil and simmer for 2 minutes, until the pasta is just cooked through.
  7. If necessary, stir in the basil.
  8. Season and then serve in bowls with a sprinkle of Parmesan.
  9. Serve with slices of garlic bread.
